  • Ingredients:
  • 1 lb boneless skinless chicken breasts, cut into bite-sized pieces
  • 1 cup butter or ghee (the latter is optional)
  • 2 large onions, finely chopped
  • In a large skillet over medium heat, stir together the chicken and butter/ghee until thoroughly coated. Add the onions and cook for about 5 minutes, or until lightly golden brown. Transfer the mixture to an ovenproof dish and top with 2 tablespoons of water; bake at 350 degrees F for 15 minutes (or longer if necessary). Serve hot with rice or naan bread on the side.

1/4 cup honey

1 tablespoon soy sauce (gluten-free if necessary)

2 garlic cloves, minced or crushed in a press

2 tablespoons ground ginger powder or freshly grated ginger root (use the rind of fresh lemon if you have it) 1 teaspoon salt

3/4 teaspoon ground black pepper

  • Prepare the chicken in the slow cooker by shredding it with two forks.
  • Add sauce and vegetables to the crock pot and cook on low for 6 hours or high for 3 hours.
  • Shred the chicken with two forks, then serve with rice or tortillas.

  • 1 lb. chicken breast, skinless and boneless
  • 1/2 cup coconut milk (or unsweetened almond milk)
  • 1 tablespoon curry paste (I used Thai Red Curry Paste from the Asian market)

Directions: Cook the chicken in a skillet with the curry paste and coconut milk until done. Serve over zucchini noodles or rice for a healthy meal that’s also vegan!

1 onion, diced

1/4 cup fresh parsley leaves, chopped (snip stems off if you don’t have access to fresh parsley) 2 cups uncooked quinoa (or brown rice), rinsed well and drained

This recipe is a great way to get your chicken on, while also making it healthy. Using breast meat means you can use less fat and calories, which means this recipe will be lower in sodium than most other chicken recipes.

  • Chicken breasts (I used 6)
  • Fresh lime juice (1/2 cup)
  • Fresh cilantro (1/2 cup)
  • Garlic powder (1/4 tsp)
  • Salt & pepper to taste

Chicken Broccoli Parmesan Quinoa Bowls

This recipe is quick, easy and delicious. You can make it in just 15 minutes or less!


  • 1 lb chicken breast (or thighs) cut into small cubes
  • 2 tablespoons olive oil (or coconut oil)
  • 8 oz broccoli florets, chopped or steamed
  • 1/2 cup quinoa (I use Trader Joe’s brand) 1 cup water 1 tablespoon apple cider vinegar 2 teaspoons salt

“Quinoa” is pronounced “keen”, so if you’re not familiar with it, now you know what it sounds like. It’s actually an ancient grain that has been cultivated for thousands of years in South America and was first domesticated by Native Americans as early as 5500 BC. The word quinoa comes from the Quechua language spoken by the Incas who called them chuño (corn).
